CELEBRITY CHEF MARK MILLER CELEBRATES THE TASTES OF FIESTA

Chefs’ menu collaboration debuts for Fiesta

SAN ANTONIO, TX - World- renowned celebrity chef and cookbook author, Mark Miller, is returning to San Antonio for a Fiesta celebration at Francesca’s at Sunset. Miller and Chef Ernie M. Estrada, Chef de Cuisine of Francesca’s at Sunset, have collaborated to create a menu of bold contemporary culinary flavors, inspired by the rich history and tradition of Fiesta. Chefs Miller and Estrada debut the Fiesta menu at Francesca’s at Sunset on Friday, April 20th. The Fiesta menu will be available through May.

The collaboration of Chefs Miller and Estrada features an array of dishes with both contemporary and traditional regional influences. Menu sampling:
  • “Three Sisters” Tamale’s, a Black Bean Tamal, Summer Squash in a Flor de Calabasa Masa Cup, Ricotta Goat Cheese Corn Tamal, & Mole Coloradito
  • Clear Tomato Gazpacho with Southwestern heat, prepared with Grape Tomato ,Serrano Chile Essence, Basil Oil, Micro Greens
  • Plantain Crusted Arctic Char Ron Don, featuring Port Salut Cheese & Refried Black Bean Cake, Green Beans and Plantain-Coconut Milk Puree
  • Broken Arrow Ranch Antelope Filet, a Blackberry & Raspberry Tamal, Texas Pecan Wild Rice, Anchiote Essence, and Mole Negro
“I am thrilled to be at Francesca’s at Sunset for Fiesta and to be creating a unique culinary experience that is not available anywhere else in the city.” said Miller.

Not only is Miller a master chef, he is also an author. He continues to inform and educate people with his cookbooks. Over the past 14 years Miller has written and published 10 cookbooks including his first book, Coyote Café, a timeless classic. Other publications include: “The Great Chile Book,” “The Great Salsa Book,” “Squash Poster,” “Tamales,” and “Red Sage.”

Set atop one of San Antonio’s highest points, The Westin La Cantera Resort was built on the site of an abandoned limestone rock quarry, which translated in Spanish give the resort its name, the rock quarry – “la cantera”.
